Peppers, or Capsicum annuum, are one of the most used fruits in the world, more than 10.000 varieties. They vary from tender sweet (known as paprika, with its origin in Turkey, developed in Hungary) till extreme hot/spicy (with its origin in South America). The colour-range is wide, from white, orange, red, violet, green till almost black. The models vary from 1 cm till more than 30 cm long fruits.
The use is for cooking and salads. The fruits have high levels of vitamin A and C, capsaicin, dihydro-capsaïcine, capsanthine and oleoresine. All giving that special taste. Capsaicine takes care of conservation of the product.
